And not just any Mayo, but a Chipotle Mayo! This is such a simple recipe requiring only 5 ingredients and it makes everything better. I’m not joking, friends and family have added this to many things and have yet to say it messes up the taste.

I decided to make my own after one of my favorite spots stopped carrying it. They used to sell it with their crab cakes and my, that was a great combination. They still sell the crab cakes, but the mayo was no more.
Anyway, on with how to make it
- 1 jumbo egg
- 1 cup of canola oil
- 1 table spoon of mustard
- half a lemon
- 3/4 cups of chipotle sauce
The reason I chose these ingredients are because
jumbo eggs are usually on sale in my location, cheaper than the large dozen. You can also use 2 regular sized eggs. 2 large eggs messes with the recipe a little.
The canola oil is just my preference, I’ve tested this out with olive, avocado, and vegetable oil. Olive oil is just too strong a flavor for me but If you really wanna use it, just substitute half a cup of the oil with olive.
Mustard helps with the emulsification, and this is where you can mess with the flavor the most without messing up the whole recipe. I love dijon mustard so that’s what I used. I’ve also tried sweet and brown mustard so used whichever you prefer, really adds flavor here./
I use an immersion blender, but you can also use a regular blender or a food processor. I find an immersion blender does the best job especially if you find a container just slightly larger than it and mine came with it.
In your container add the egg/s, lemon juice, and mustard and begin to blend. Once everything begins to come together into a nice smooth mixture, begin to slowly add in the Oil. if you have a small food processor the tops usually have a feeder that helps with this. After half the cup of oil is in, you’ll see it start to become creamy and you’re almost done. You can also add salt and pepper if you like but I find the mustard give it enough flavor for me.
